Valentine's Day is coming up and we’ve got you covered with the perfect date night! These recipes are delicious and still super healthy. Perfect to make with someone you love! Whether you’re curling up with a book and a glass of wine, or celebrating Galentine’s Day with your bestie, or with your significant other!
1. Cauliflower pizza + salad
Ok babe - you’re about to be obsessed with this! We all love a delish extra-thick crust pizza, but those carbs can make us feel so bloated! Even though we’ve got Flat Tummy Tea to combat bloat, we are still super interested in creating a low-carb version. Sooo tonight’s pizza is made with a cauliflower crust. It’s super easy to make, completely gluten free and so healthy!
Ingredients you’ll need:
- 2lbs of Riced Cauliflower (you can purchase, or make your own!)
- 2 eggs
- 1 cup of Shredded Cheese (the amount is more of a personal preference, and you can get vegan, lactose free, etc)
- Italian Seasoning, Salt & Pepper
- Pizza toppings of your choice
Step 1: Preheat your oven to 425 degrees Fahrenheit.
Step 2: If you’re making the riced cauliflower from scratch, to prep it you’ll need to break it into florets, and then process it in a food processor to make sure there isn’t any excess moisture- we recommend using a cheesecloth to strain it for a super crispy crust! If you’re using frozen, be sure to defrost in the refrigerator the night before, and also drain with a cheesecloth.
Step 3: Mix riced cauliflower in a bowl with the 2 eggs + your shredded cheese. Mix in your spices, and spread the mixture onto a baking sheet lined with parchment paper.
Step 4. Bake for about 25 minutes at 425 F, or until the desired doneness!
Step 5: Take your crust out, add pizza sauce and yummy toppings.
Step 6: Put your whole pizza back in the oven, and cook until cheese is melted!

2. Dark Chocolate covered fruits/berries for dessert
This is one of our absolute fav recipes! Chocolate covered strawberries scream valentines day - but we enjoy them all year round. They look beautiful, can be made in under 10 mins and they’re actually good for you (in moderation)! Studies suggest that the cacao in dark chocolate provides us with disease fighting antioxidants, and the flavonoids may help boost heart health through lowered blood pressure…. Which is good enough for us! We’re all about that balance, right?
Ingredients you’ll need:
- 1lb of Fresh Strawberries
- 12 ounces of dark Chocolate (the higher the cacao percentage, the better. Stay away from flavored options, those generally contain more sugar!)
Step 1: Make sure the strawberries are totally dry, otherwise the chocolate won’t stick!
Step 2: Melt the Chocolate in the microwave in 15 second intervals (don’t forget to stir!)
Step 3: Dip Strawberries in Dark Chocolate
Step 4: Lay them on parchment paper, and put on a plate in the Fridge to cool!
Pro tip- if you realllly want to get fancy, add ½ cup of lightly salted, chopped & roasted nuts (pistachios are our fav)!
